The name

Excellent food in this hole.

An official said it decades ago, on his way out the door. In Greek a trypa is a hole, and the line stuck, until it became the name over the door. We never argued. The food is still the point.

How a night here works

Sit at the bar. Watch it cook.

There is no waiting for a kitchen you cannot see. The grill is right there, and so is Kostis.

    No menu

    You do not order from a card. The table decides as it goes, plate after plate, until you wave the white flag.

    Over the charcoal

    Everything, grilled and fried, is cooked in front of you on the coals. We may be the only place in Cyprus that does it this way for the whole table.

    In no hurry

    Regulars take the bar stools facing the fire and stay. You come at eight, you leave near eleven, and nobody rushes you.

What comes to the table

There is no menu. This is what the night might bring.

It changes with the season and the morning market. These are the plates our guests come back for.

To drink

Cold zivania, and time.

The pour here is zivania, the Cypriot spirit, the way the old tavernas served it, with a little something to chew alongside. There is wine and cold beer too. Nothing complicated.

The room

Thirty seats, a fire, and a wall full of the sea

The walls are covered in old photographs and paintings of ships and water, from the days the owner sailed under it. In winter the fireplace is lit. It is small, warm, and entirely itself.

An easy place to miss, the best kind to find

From the street it is small and unassuming. That is the whole charm. Sit down once and you understand why the regulars never leave. Best to call ahead, the room is tiny.
